Guatemala - Concepción Villatoro - Finca Los Dos Socios

Concepción Villatoro Matías owns the 10-manzana farm Los Dos Socios, where there are several different types of coffee growing on about 95 percent of the farmland. After the coffee is picked and sorted it's depulped the same day, then fermented dry for 18–24 hours and washed three times until it's free of mucilage. Concepción spreads the coffee on concrete patios to dry, which takes from 3.5–5 or 6 days, depending on the weather.
